Chive and Cheese Popovers
Ingredients
- ½ cup chopped herbs ( chives, parsley and basil)
- 4 eggs
- 2 cups milk
- 2 cups flour
- 1 cup shredded Gruyere or Parmesan cheese
- ½ tsp pepper
- ¼ tsp salt
- 6 T olive oil
Instructions
- Beat all of the ingredients (except the cheese) together until frothy. Let sit to reach room temperature and beat again.
- Heat popover (or muffin tin) with 1 tsp oil in each cup at 375 until almost smoking (2 minutes).
- Pour in the batter and top with cheese.
- Close the oven door softly and let puff up and brown. (approx. 15 minutes)
