Asparagus-Cheese Melt
Ingredients
for 1, easily doubled and tripled and quadrupled..
- 1 slice favorite bread
- 2 asparagus spears
- 1 slice favorite prosciutto
- Fontina cheese
- Optional to finish: freshly-ground pepper, fresh Parmesan, arugula
Directions
- Lightly toast your bread.
- Simmer the asparagus in salted water for 3-4 minutes.
- Cut into 2 inch slices.
- Place prosciutto slice on bread.
- Lay asparagus stalks on top of the prosciutto.
- With a vegetable peeler, peel of thin slices of fontina cheese.
- Put on baking sheet. Bake at 350 degrees F until cheese is melted – about 5 minutes.
- Sprinkle pepper and Parmesan over if you wish.
- Serve.
