FRESH ANCHOVIES MARINATED WITH LEMON AND OLIVE OIL

juice of 1 lemon

6 parsley sprigs, coarsely chopped

2 garlic cloves, sliced

16 fresh anchovies, cleaned and butterflied (see video on how to clean and butterfly below)

Preparation

Lay the anchovies on a platter skin side down

Sprinkle them with lemon juice, olive oil, parsley, garlic, and salt and pepper to taste.

Marinate the mixture in the refrigerator for 24 hours.
