Fried Bell Peppers and Potatoes
Calabrese-Style Fried Potatoes with Peppers

Ingredients
- 2 big or 4 medium red bell pepper, seed and cut bell peppers into thin strips.
- 2 big potatoes or 3 medium, very thinly sliced
- 1 medium onion sliced
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, thinly sliced
- Finely chopped fresh parsley
- Salt to taste
Instructions
- Put the extra virgin olive oil and garlic in a frying pan and fry the potatoes on a low flame until almost cooked. Remove and keep aside.
- In the same frying pan, fry the bell peppers on a low flame until almost cooked.
- Add the fried potatoes and sliced onions, season with salt to taste, and fry well until cooked through and golden brown.
- Garnish to taste with parsley
- Serve warm
