Italian Two Bean Salad
Ingredients
- 10 oz Borlotti beans canned
- 10 oz Cannellini beans canned
- 2 stick celery sliced
- 1 small red onion sliced thin
- 2 tablespoon Parmesan cheese to grate
Dressing
- 6 tablespoons olive oil
- 2 tablespoon wine vinegar
- 4 cloves garlic minced/grated
- 0.5 teaspoon oregano
- 12 leaves basil torn into quarters
- salt to taste
- black pepper freshly ground, to taste
Instructions
- Combine beans, celery and onion in a bowl.
- Whisk together the ingredients for the dressing, then pour over the bean salad mix well.
- Grate Parmesan cheese over the top and serve.
