Zucchini and Onion in Red Sauce Recipe
Ingredients
4 servings
- 1 zucchini
- 1 small onion
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 6 ounces crushed tomatoes (San Marzano)
Directions
- Slice zucchini and onion into thin slices
- Add olive oil to pan and let simmer at medium-high heat for 2-3 minutes
- Add onion and let saute for 5 minutes
- Add zucchini, salt, and pepper and cook for another 5 minutes
- Add crushed tomatoes, stir into zucchini and onions and then cover pan with lid
- Cook for another 10 minutes and stir occasionally. Once zucchini are soft, dish is ready.
- Remove from stove, let sit for 5 minutes and then serve
