Eggs alla Caprese… a healthy and delicious breakfast.


For 1 Person(s)

For the Eggs:

  • 2 large eggs

  • 2 slices of mozzarella

  • 2 slices of tomato

  • salt & pepper

  • extra virgin olive oil

  • 1 leaf of basil


  1. Add 2 Tbs of EV olive oil to a pan. Let the oil get hot.

  2. Add the two eggs, the slices of tomatoes and over the tomatoes add the slices of Mozzarella.

  3. Add salt and pepper as desired.

  4. Once the eggs are cooked and the mozzarella has melted, serve and garnish with a leaf of basil.
