Italian Cloud Cake of carrots

Ingredients:

320 g of grated carrots
300 g flour 00
160 g of sugar
200 g of water
100 g of sunflower oil
baking powder to taste
vanillin


Procedure:

Finely grate the carrots into a container, then add the sugar and the liquid and mix well. At this point, slowly add the flour sifted with baking powder and vanilla to the rest of the dough and mix with a wooden spoon making ” get air ” in the compound in such a way as to make it softer . The dough should not be too liquid, but not too thick , so if it is too thick , add more water or otherwise, if it is too liquid , add flour. After lining the pan with margarine and flour , pour the contents inside. Bake for about 40 minutes in the preheated oven to 170 °. Once baked and cooled down , you can also sprinkle with powdered sugar ( I have not done) … well you just have to eat this soft cloud of carrots !
