Codfish with peppers
Ingredients for 6 people:
codfish 800 gr
8 peppers
3 sliced onions
tomato sauce 600g
olive oil 1 dl
a tablespoon of chopped parsley
salt, pepper.
PREPARATION
Scale the cod and cut into small pieces, then rinse with fresh water and dry it with a cloth. Prepare the peppers: roast and peel them, remove the core and seeds, wash, dry and cut into small pieces.
In a pan, sauté the sliced onions in plenty of olive oil and when will be browned add the tomato puree and cook for 20 minutes. At this point add the peppers and season with salt and pepper. If the sauce is too thick add half a ladle of warm water.
Halfway through cooking add the chopped parsley, stir well and then add the pieces of cod. Cover and simmer for about 10 minutes.
