Easy Turkey Soup

 

INGREDIENTS

Serves 4 to 6 people

  • 2 Tbls of light extra virgin olive oil

  • 2 cloves of garlic, chopped

  • 1 yellow onion, chopped

  • 2 carrots, sliced

  • 2 stalks of celery, sliced

  • 3 white potatoes, cubed

  • 1 pound baby spinach, rinsed and stems removed

  • 4 15oz cans of low fat chicken broth

  • 1 cup of water

  • 2 to 3 cups of leftover turkey, diced

  • 1 tsp of thyme

  • 2 bay leaves

  • 1 tsp of salt

  • 1 tsp of fresh ground black pepper

     

    PREPARATION

     

  • In a large pot, saute the garlic, onions, carrots, celery and potatoes for 2 to 3 minutes.

  • Add the spinach and cover until spinach is slightly wilted.

  • Add the broth, water, turkey, thyme, bay leaves, salt and pepper.

  • Bring to a boil then lower the heat and simmer for 30 to 40 minutes until the vegetables are tender.

  • Remove the bay leaves before serving.

  • Serve with cook whole wheat pasta (optional)
