Hunter’s noodle
From the South Tyrolean valleys
Ingredients For 6 people:
For the dough:
Flour 500g
3 eggs
warm water
salt.
For the sauce:
200g mixed mushrooms
bacon, diced 80 gr
butter 50g
2 tablespoons of heavy cream
1 onion, chopped
grated Grana cheese
salt, pepper.
PREPARATION
Pour the flour on a pastry board and create a central recess in which you are going to shell the eggs, adding salt and warm water. Mix well, then with a rolling pin, roll out the dough making thin well, roll it up and cut the noodles not too thin, the, let them on floured surface.
Apart clean the mushrooms, slice them and fry in butter with the onion for about ten minutes. Now add the cream and diced bacon, Parmesan cheese, salt and pepper and continue to cook over low heat. In a pot with salted water, boil the noodles, freshly cooked drain and flavor with the sauce of mushrooms and bacon. Serve warm.
