Asparagus-Cheese Melt


for 1, easily doubled and tripled and quadrupled..

  • 1 slice favorite bread
  • 2 asparagus spears
  • 1 slice favorite prosciutto
  • Fontina cheese
  • Optional to finish: freshly-ground pepper, fresh Parmesan, arugula


  1. Lightly toast your bread.
  2. Simmer the asparagus in salted water for 3-4 minutes.
  3. Cut into 2 inch slices.
  4. Place prosciutto slice on bread.
  5. Lay asparagus stalks on top of the prosciutto.
  6.  With a vegetable peeler, peel of thin slices of fontina cheese.
  7.  Put on baking sheet. Bake at 350 degrees F until cheese is melted – about 5 minutes.
  8. Sprinkle pepper and Parmesan over if you wish.
  9. Serve.
