Broccoli Salad

INGREDIENTS

  • 1 bunch of broccoli

  • 10-14 cherry tomatoes

  • 1 small red onion chopped

  • 2 cloves of garlic chopped

  • 4 anchovy fillets finely chopped (optional)

  • 1/2 cup of extra virgin olive oil

  • 1/2 Tbls of Dijon mustard

  • 1/4 cup of red wine vinegar

  • 1/4 tsp of salt

  • 1/4 tsp of freshly ground black pepper

  • 1/4 cup of freshly chopped parsley

    PREPARATION

  • Wash and cut the broccoli into pieces.

  • Steam the broccoli until tender. Refrigerate to cool.

  • Add tomatoes and onions.

  • In a small bowl whisk in the remaining ingredients.

  • Pour over the broccoli, onions and tomatoes and your ready to serve
