Cardoons in Batter
Serves 6 to 8
Ingredients:

2 small bunches of cardoons prepared see below

5 cups of canola oil for frying

½ lb. sifted all-purpose flour

2 medium eggs
-
¼ cup of water or milk
-
2 tablespoons of olive oil
-
1 teaspoon of white vinegar or lemon juice
-
½ teaspoon of baking soda or ½ oz. of yeast
-
salt to taste or 2 salted and boneless anchovies crushed into a paste
