Chicken Florentine


Chicken Florentine is simply tender cuts of chicken topped with fresh spinach and melted mozzarella then braised in a your favorite red gravy.

When making this chicken florentine recipe make sure you use fresh spinach and mozzarella.


1 8 oz package of baby spinach

1/2 cup of flour

1/2 tsp of salt

1/2 tsp of fresh ground black pepper

4 boneless chicken breasts

4 Tbls of butter

3 Tbls of extra virgin olive oil

4 to 6 slices of fresh mozzarella Cheese

4 cups of your favorite Italian gravy


Wash the spinach under cold water and place in a frying pan with 1 Tbls of butter and cook until the spinach is wilted.

Season the flour with salt and pepper.

Dredge the chicken breasts in the flour coating evenly.

In a large frying pan sauté the chicken in the remaining butter and oil until browned on both sides. Around 3 minutes on each side.

Place some spinach and a slice of mozzarella cheese on each piece of chicken.

Pour the gravy around the chicken and cook covered for around 30 minutes.

Serves 4 people
