Some desserts never go out of style–like classic crostata, an Italian pie covered with cream or jam, in this case of berries.

Ideal for breakfast or brunch, perfect to be served with tea, jam tarts are classic Italian desserts made with crumbly pastry that you can garnish as you prefer.

This berry crostata recipe is very fast and easy to make.

You can follow the same instructions to make mini pie crust that you can fill with your favorite fruit jam.

It goes without saying that if you change the fruit you create a different lattice jam tart each time.

Instructions

  • Whisk softened butter and sugar until soft and creamy, by hand or in a little food processor.
  • In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture.
  • Add the egg too and whisk.
  • Knead quickly with your hands, create a ball and leave to rest in the refrigerator for an hour.
  • After this time, roll out the dough on a floured surface and create a disk about 4 mm thick.
  • Roll the dough onto the rolling pin and unroll over a 5-inch round or square tart pan.
  • Prick the pasta with a fork, trim the edges with the tips of the fingers and spread the jam inside.
  • If you have some leftover dough, make strips using a toothed wheel and cross them on the jam to form the classic grid.
  • Press the ends with the fingers to seal them.
  • Alternatively you can cover the pie with some fresh berries (image).
  • Sprinkle the surface of the tart with brown sugar and bake at 80 °F in a conventional non-fanned oven for about 25 minutes.
