Pancetta Wrapped Artichokes

What You Need

Serves 6-8.

  • Two 14-oz. jars artichoke hearts
  • 8 slices pancetta, halved crosswise
  • Olive oil, for frying
  • 1/3 cup freshly grated Parmigiano cheese
  • 1 tbsp ground black pepper

How To Do

  1. Pour olive oil to a depth of 2 inches in a 6 quart Dutch oven.
  2. Heat over medium-high heat until a deep-fry thermometer reads 350°F.
  3. Place each artichoke heart on one end of a pancetta slice.
  4. Sprinkle with some of the Parmigiano cheese and pepper, and roll up.
  5. Secure with a toothpick.
  6. Fry until golden brown, about 3 minutes.
  7. Drain and Serve
