Parmesan Zucchini Fries
Ingredients
Makes 4 servings

½ cup Panko bread crumbs

½ cup grated Parmesan cheese

2 tablespoons minced fresh parsley

1 tablespoon cornstarch

2 eggs beaten

1¾ pounds zucchini, ends trimmed, halved and cut into ½-inch strips
Procedure

Preheat Air Fryer to 320°F.

Stir bread crumbs, cornstarch, parsley and Parmesan cheese together in a shallow bowl.

Whisk eggs in a separate shallow bowl.

Dip zucchini strips into egg mixture, shake to remove any excess and roll strips in bread crumb mixture to coat. Transfer zucchini strips into Air Fryer.

Bake for 15 minutes, tossing the fries after 5 minutes.
