Pears Poached in Chianti


  • 4 pears

  • 1 cup of water

  • 1 cup of sugar

  • 1 cup of chianti wine

  • 1 lemon peel, sliced

  • 1/2 cup of lemon juice

  • 1/2 stick of cinnamon

  • 3 whole cloves


  • Combined the sugar and the water in a large saucepan.

  • Heat and stir until sugar has dissolved.

  • Stir in the wine.

  • Stir in the wine, lemon juice, lemon peel, cinnamon and cloves.

  • Peel, cut the pears in half and core.

  • Place the pears in the syrup mixture coating them well.

  • Bring to a boil, cover and cook 5 to 10 minutes until pears are tender.

  • Talk the pears out and chill.

  • Chill the remaining syrup.

  • Plate the pears and pour the syrup over the top.

    Serves 4 people
