Recipe: Broccoli di Rape Stufati (Sauteed Broccoli Rabe)

Serves: 4


  • Salt to taste
  • 1 pound broccoli rabe
  • 1 tablespoon extra virgin olive oil
  • 3 cloves garlic, sliced
  • Crushed red pepper flakes, to taste
  • Pepper to taste
  • Whole peppers, for garnish


Bring a large saucepan of lightly salted water to a boil. Have a bowl of ice water standing by. Prepare broccoli rabe by trimming ends and removing any yellowed leaves. Drop in broccoli rabe and cook 4 minutes. Move broccoli rabe to ice water and cool, then drain. Can be prepared up to 1 day ahead and refrigerated.

When ready to serve, in a large skillet, heat olive oil and garlic over medium heat. Cook until garlic is golden, stirring constantly, lowering heat if necessary to keep it from burning. Add broccoli rabe and a pinch of red pepper flakes. Saute over low heat 5 minutes or until broccoli rabe is warmed through and takes on flavors of garlic and pepper. Season to taste with salt and pepper. Garnish with whole peppers if desired.
