Spinach and Mushroom Smothered Chicken Breast
Ingredients
Makes 4 servings.
- 6 oz baby spinach
- 8 oz baby bella mushrooms sliced
- 1/2 white onion sliced
- 2 tsp crushed garlic
- 2 tsp salt
- 1/2 tst ground black pepper
- 3 sprigs fresh thyme or 1/2 tsp dried thyme
- 2 oz cream cheese softened
- 4 chicken breast
- 1/2 cup mozzarella cheese.
Directions
- Preheat oven to 350 degrees.
- Spray a large saute pan with Pam cooking spray.
- Over medium heat saute chicken breast about 4 minutes on each side.
- Remove chicken and place in a 13 x 9 casserole dish sprayed with Pam.
- To saute pan over medium heat add spinach, mushrooms, onions, garlic, thyme, salt and pepper. Saute about 10 minutes or until spinach is wilted.
- Add cream cheese and incorporate well into spinach mixture until it appears creamy.
- Remove from heat and pour mixture over chicken breast.
- Sprinkle with grated cheese and bake uncovered for 30 minutes. Enjoy!
