Sweet and Sour Onions (Cipolline in Agrodolce)

So here is the recipe from Saveur magazine.  This serves 4-6 people.



  • 1/2 cup raisins

  • 3 tbsp extra virgin olive oil

  • 1 1/2 lbs cipolline or pearl onions, peeled

  • 1/4 cup balsamic vinegar

  • 1 1/2 tbsp sugar

  • Kosher salt, to taste


  1. Put raisins in a small bowl and cover with hot water.  Let them sit for 30 minutes and then drain.

  2. In a 12″ skillet  over medium high heat add the olive oil and onions.  Cook for about 8-10 minutes or until the onions are golden brown.

  3. Pour or spoon out the excess oil.  Add the raisins, vinegar and sugar.  Let reduce until the vinegar reaches a thick sauce consistency.  This should take about 2-3 minutes.

  4. Add salt to taste and serve.
