Tunnina ammuttunata

Ingredients for 4 people:

Fresh tuna in a piece full 1 kg

2 cloves of garlic

1 bunch of fresh mint

1 onion

blanched almonds 50g

1 bay leaf

tomato sauce 7 dl

1 glass of dry white wine

1 cup of extra virgin olive oil

salt, pepper.


Place the tuna in cold, salted water for about an hour, then dry it and make small incisions on the pulp, inside of which you insert chopped garlic, mint and chopped almonds.

Heat the oil in a pan with the bay leaf, add the tuna and brown well on all sides. Sprinkle with white wine and let it consume high heat, then drain the fish by holding it warm.

Slice the onion and sauté it in the tuna cooking sauce, add the tomato sauce and sprinkle with a cup of hot water by boiling it all. Season with salt and pepper, add again the tuna and cook over medium heat for about 1 hour.
