Zucchini and Chickpea Meatball recipe

Ingredients (for about 7 meatballs): 

1/2 zucchini
1 handful of boiled chickpeas
1/2 onion (small)
6 green olives
kamut milk to taste
extra virgin olive oil
salt and pepper
bread crumbs


Mix with the blender zucchini (chopped) with onion (also chopped) and olives (1 pinch of salt and pepper), using a little ‘milk kamut until you get a smooth consistency. Then add the chickpeas and 1 drop of extra virgin olive oil, whisking and if necessary adding a little ‘milk. Finally abound with bread crumbs, do not be put off by the texture too soft, and create balls helping with the breadcrumbs. 1 brown them in a pan with little oil until they are golden brown.
