Battering and frying sage leaves is absolutely delicious – you can’t make too many of these!

Ingredients

  • 2/3 cup (100g) self-raising flour

  • 5 oz(150ml) beer (lager)

  • Olive oil, to shallow-fry

  • 24 large sage leaves (from 2 bunches)

Method

  • 1.

    Whisk flour, lager and some freshly ground pepper together in a large bowl. Heat about a inch deep of oil in a deep frying pan over medium heat (a cube of bread will turn golden in 15 seconds when the oil is hot enough).

  • 2.

    In batches, coat the sage leaves in the batter, shaking off any excess, then fry for 1 minute each side or until golden and crisp. Drain well on paper towel, then season with salt and serve immediately.
