Fried Lampascioni (Wild Onions)
Ingredients for 6 people:
36 wild onions
flour 80g
3 eggs
1 clove garlic, minced
grated pecorino cheese 120 gr
2 tablespoons chopped parsley
olive oil (for frying)
salt.
PREPARATION
Clean wild onions then cook them in boiling salted water until cooked.
Meanwhile, in a bowl mix the flour, with eggs and cheese, then add the garlic and parsley chopped finely and mix well.
Now drain the wild onions and bake in prepared batter then fry in plenty of hot olive oil will be golden; drain them, let them dry on a paper towel and serve hot.
