Rigatoni Toranese

Rigatoni Toranese 


2 medium onions
5 and 1/2 ounces fresh lard
4 tbsp freshly grated Pecorino cheese
17 and 1/2 ounces rigatoni pasta
Salt and pepper


Bring the water to a boil in a large sauce pan.

Dice the lard and put it in a frying pan with the finely sliced onions and let it simmer.

When the water comes to a boil, cook the rigatoni. Strain the pasta.

Mix in the onion sauce and 4 tbsp of freshly grated Pecorino cheese.
