I Love Italian Food

When I was much younger my mom used to make something where the rendered tomatoes filled the deep dish frying pan and then she broke eggs into the middle of the tomatoes.

It was something that she  would often make for dinner not just for breakfast and it was one of my favorites. To this day it is just unique enough that if we have people over and make this it gets all the  oohs and ahs…. because even though its so simple it is something that most people never experience.

I love tomatoes to begin with and eat eggs almost every day despite the so called cholesterol scare.

So take a few moments and watch as Laura prepares this old fashioned dish. I recall my grandmother and great grandmother making this. My  non Italian friends would come over and think we were making something from Mars….

Funny as my memory serves me I recall going to the “farm” to pick bushels of tomatoes and then to the place where we bought the eggs. A little guy in Doylestown Pennsylvania that raised just a few dozen chickens. We would buy those eggs because they were so much better than the store bought. I remember the difference between cracking those we bought from the farmer as having much thicker shell and bright yellow yolks.
